Saint Honore: Flaky puff pastry layer topped with vanilla bean custard and surrounded by caramelized crème puffs. This is best served with raspberry sauce. Serves 8 – 10.
New Year’s Log: Fluffy sponge roulade and a heavenly light filling of butter cream covered with chocolate or white French butter cream.
Chocolate Marjolaine: Crunchy chocolate meringue layers filled with white chocolate mousse and clouds of dark chocolate ruffles!
New Year’s Champagne Cake: Light almond Genoise, champagne infused white chocolate mousse and champagne flavored buttercreme.
Pistaccio Cream Cake: Layers of chocolate genoise with Pistachio butter cream filling finished with Ganache.
Croquembuche: Pate choux filled with vanilla bean custard covered in caramelized sugar and formed into a New Year’s Tower—then covered in delicate spun sugar! An exquisite dessert and centerpiece!
